Golden Crispy Tofu Cutlets with Vegan Gravy

Ingredients:

2 packages Nature’s Soy extra-firm tofu

1 cup panko breadcrumbs

1/2 cup all-purpose flour

1/2 cup Nature’s Soy unsweetened soymilk

1 tsp garlic powder

1 tsp dried thyme

Salt and pepper to taste

Olive oil spray

For Vegan Gravy:

1/4 cup vegan butter

1/4 cup all-purpose flour

2 cups vegetable broth

1 tbsp soy sauce

1 tsp onion powder

1/2 tsp garlic powder

Salt and pepper to taste

Instructions:

For the Tofu Cutlets: Preheat your oven to 400°F (200°C). Slice the extra firm tofu into 1/2-inch thick cutlets.

In one bowl, combine flour, garlic powder, thyme, salt, and pepper. In a second bowl, pour the almond milk. In a third bowl, place the panko breadcrumbs.

Dredge each tofu cutlet in the seasoned flour, then dip in unsweetened soymilk, and finally coat with breadcrumbs.

Place the breaded cutlets on a baking sheet lined with parchment paper and lightly spray with olive oil.

Bake for 25-30 minutes or until the cutlets are golden and crispy, turning halfway through.

For the Vegan Gravy: In a saucepan over medium heat, melt vegan butter. Stir in the flour to create a roux. Cook for 1-2 minutes.

Gradually whisk in the vegetable broth, ensuring there are no lumps. Add soy sauce, onion powder, and garlic powder. Continue whisking until the gravy thickens. Season with salt and pepper to taste.
