Glazed Teriyaki Tofu Bites
Ingredients
For the Tofu Meatballs:
1 and half packed Nature’s Soy Firm Tofu (pressed)
1 cup panko breadcrumbs
1/3 cup crushed almonds
1/3 cup sweet corn
1 tbsp garlic (minced)
1 tbsp ginger (minced)
3 tbsp soy sauce
1 tbsp sesame oil
3 tbsp cornstarch
Salt and pepper to taste
For the "Jack-o'-Lantern" Bases
6-8 mini sweet peppers (orange and yellow work best)
Olive oil (for brushing)
For the Teriyaki Glaze
⅓ cup soy sauce
3 tbsp mirin
3 tbsp maple syrup
1 ½ tsp toasted sesame oil
2/3 cup chilled water with 1 ½ tbsp cornstarch
Garnish
toasted sesame seeds
chopped scallions or cilantro
Instructions
Add your crumbled Nature’s Soy Firm Tofu, panko breadcrumbs, corn, garlic, ginger, soy sauce, sesame oil, sea salt, cornstarch, crushed almonds, and black pepper into a food processor. Pulse a few times until the mixture becomes wonderfully crumbly and holds together when pressed.
Pro-Tip: Scrape down the sides as needed, but be careful not to overblend! Keeping a bit of hearty texture is the secret to getting that perfect, satisfying bite.
Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper. Roll the mixture into bite-sized golden spheres and space them evenly on your prepared pan. Brush lightly with oil for that gorgeous crispiness. Bake for 40 minutes, turning gently halfway through, until evenly golden and lightly crisped on the outside.
While your tofu bites are getting golden in the oven, combine the soy sauce, mirin, maple syrup, sesame oil, and cornstarch water in a small saucepan over medium heat. In a separate small dish, whisk together chilled water and cornstarch to create a smooth slurry.
Once the sauce reaches a gentle boil, stir in the slurry and bring it back up to a simmer. Watch the magic happen as it instantly thickens into a rich, glossy glaze—then remove it from the heat immediately.
Transfer your freshly baked, crispy tofu bites directly into the saucepan or a mixing bowl. Pour the warm teriyaki glaze over the bites and gently toss until every single piece is completely coated in a rich, glossy finish.
Carve the Mini Pumpkins
Take your sweet peppers, slice off the tops, and remove the seeds. Using a small paring knife, carefully carve cute or spooky little Jack-o'-lantern faces (triangular eyes and smiling mouths) onto the front of each pepper.
Roast the Bases
Brush the carved mini peppers lightly with olive oil and roast them at 350°F for about 10 minutes until slightly tender and vibrant.
The Grand Assembly
Place each roasted mini pumpkin pepper upright on a serving platter. Transfer your freshly baked tofu bites right on top of each pepper, and secure them with a stylish bamboo pick. Garnish with sesame seeds and fresh scallions.
There you have it—spooky season, elevated. Whether you’re hosting a chic Halloween movie night-in or just want to win the group chat with your culinary skills, these Teriyaki Tofu Bites "Jack-o'-Lanterns" are bound to steal the show. Let your autumn aesthetic shine!
