Pan-Seared Tofu with Tomatoes, Corn & Seasonal Veggies

Ingredients (Serves 2–3):

1 block Nature’s Soy firm tofu, cubed

2 large ripe tomatoes (or 1.5 cups cherry tomatoes), chopped

1 cup corn kernels (fresh or frozen)

1 handful green beans or bell pepper, chopped

1 teaspoon minced garlic

1 teaspoon olive oil or sesame oil

Salt and black pepper, to taste

Optional: fresh basil or Thai basil for garnish

 

Instructions:

Prepare the tofu

Press tofu to remove moisture, then cut into cubes. Season lightly with salt and pepper, and pan-sear with oil until golden on all sides. Set aside.

 

Cook the vegetables

In the same pan, add a touch more oil and sauté the garlic until fragrant. Add tomatoes and corn and stir-fry for 2–3 minutes. Toss in green beans and cook until just tender.

 

Combine and finish

Return tofu to the pan, stir gently to combine, and season to taste. Let the tofu soak up some of the tomato juices for a richer flavor.

 

Plate and garnish

Serve warm with fresh herbs sprinkled on top for added aroma and color.
